. Starting from the top install a wood shim in the gap and another one at the bottom. Stuff it full of insulation and if its less than a quater inch you can caulk it. This tactic works best for extreme cases where the drywall extends out considerably far from the jamb.

Install the ceiling Sheetrock before hanging panels on the walls. It is easier to do it this way especially if use use some temporary pieces of 1x than span the width of the backside of the door to help you keep it in the rough opening. Ive made a few test holes and there seems to be solid wood behind it but I dont know if this is just some 24s or if it is a solid piece more appropriate to be exposed as a jamb.
